I love assorted desserts , and I think individual shooter style desserts are the perfect end to any meal .I usually have a variation of flavors so everyone is happy at the end of the day. A neat trick is to just use the same same base that I used for my previous post, the cheesecake and Greek yogurt base but I just switched up the flavors !! Yes guys, easy peasy and so SO good. I highly recommend using piping bags to pipe mousse as well as the whipped cream into mini shooters because 1. It looks fabulous and 2. It will save you a ton of time . These can be made up to two days in advance . For the ones that are topped with fresh fruits, you can put cut up fresh fruits right before serving or the night before if making these forty eight hours ahead of time.
For a gluten free version, you can use gluten free cookies as base or skip cookies altogether . So there is something for everyone !
2 8oz blocks of Cream Cheese
1 cup Greek yogurt /sour cream
1 cup of Heavy Whipping Cream
Pieces of Pound cake
12 Biscoff cookies
12 Oreos
For Salted Whipped Cream for topping:
2 cups of Heavy Whipping
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon Coarse Sea Salt
To prepare Salted whipped cream:
Add sugar, vanilla and salt to heavy whipping cream and beat on high with a hand mixer until stiff peaks form! Do not over beat , it will become butter .
Transfer half into a large piping bag, you can transfer more as needed .

For Pineapple Cheesecake shooters:
Vanilla extract
A small can of pineapple chunks with juice
Fresh cherries (pitted ) for topping
For Chocolate Cheesecake shooters:
4 tablespoons of Dark Chocolate pudding mix or 4 tables of good quality cocoa powder
Vanilla extract
Dark chocolate Chips or melts for toppings
For Key Lime Strawberry shooters:
1 Key Lime
2 drops of green food color (optional)
Fresh strawberries
For tiramisu cheesecake shooters:
1 teaspoon of good quality instant Coffee dissolved in a tablespoon of boiling water
To make the base of the desserts:
In a large Mixing bowl, beat together cream cheese (has to be on room temperature) and Greek yogurt until well mixed and fluffy.
Add heavy whipping cream and beat until almost stiff.
Divide the mixture into four bowls (depending on the which flavors you’re making).
For Pineapple Cheesecake shooters:
Add 1 teaspoon of vanilla extract to cheesecake mixture and beat until stiff .
Transfer into a piping bag .
Assemble shooters by putting a little piece of cake at the bottom. Then using a little spoon, put a few chunks of pineapple and some juice .
Pipe some cheesecake mixture, then some more pineapple chunks and then pipe some whipped cream.
Top with fresh cherries or pineapple.
For Chocolate Cheesecake Shooters:
Add pudding mix or cocoa powder to cheesecake mixture and beat until stiff.
Transfer into a piping bag.
Coarsely grind some Oreos.
Spoon Oreos in shooters and then pipe some chocolate mousse.
Now pipe some whipped cream and add a few chocolate Chips/melts or even crushed oreos.
For Key lime cheesecake shooters:
Zest the lime in the cheesecake mixture ,cut it up and squeeze the juice in the mixture. Add two drops of green color and mix with a hand mixer until fluffy.
Transfer into a piping bag.
To assemble , spoon crushed Biscoff cookies for base, then some cheesecake mixture, then some cut up fresh strawberries.
For Tiramisu Cheesecake shooters:
1 tablespoon of coffee in the cheesecake mixture and beat until fluffy.
Transfer into a piping bag .
Use crushed up Biscoff cookies as base in shooters and then pipe some coffee mousse .
Top with whipped cream and crushed up Biscoff cookies .
This recipe is extremely versatile and you can make several different version with various fruits and pudding mixes and cookies or cakes ! Just go wild and have fun , lovers!!
