Here is what you will need:
For chicken marination:
1 pound boneless chicken breast
1 large lemon
1 teaspoon paprika powder
Olive Oil
1/4 cup Sambal Oelek( or your favorite hot sauce)
Salt
For the Red Pepper Aioli :
1 red pepper
6 garlic cloves
1/2 red onion
1/2 cup mayo
salt
lemon
pepper
1/2 a bunch of Cilantro(optional)
For assemble:
1 loaf of Ciabatta bread (you could use French bread)
Cheese slices ( I used pepper jack) *
Fresh greens such as baby spinach
pickled onions
pickled peppers
Note: Using Cheese is also optional, it is best to broil it if you use it for best results.
Directions:
Slice and pound the chicken breasts into thin filets. Marinate the chicken in 1/4 cup sambal oelek, lemon juice, 4 tablespoons of olive oil, and 1 teaspoon of salt and 1 teaspoon paprika powder. Let it sit for at least an hour , a few hours is ideal.
Grill the chicken in a heavy bottomed grill pan or skillet, make sure the pan is really hot in order to get a good sear. It should take 4-5 minute on both sides.
Preheat oven to 450°F. Line a small baking tray with parchment paper or foil. Cut the bell pepper and onion in large cubes. Transfer to tray along with garlic cloves, coat with olive oil and a little bit of salt. Bake for 15-20 minutes or until roasted.
In a blender add the roasted vegetables, mayo, cilantro, lemon juice .1/4 teaspoon salt and 1/2 teaspoon of black pepper. Blend to a creamy consistency, taste test the salt and acid , adjust if needed.
To assemble:
Cut and slice the loaf in half and generously slather both sides with the red pepper aoili .
Layer with chicken and cheese. Broil or bake at highest heat setting for 3-4 minutes until cheese is melting (keep a watchful eye ). Sprinkle your favorite greens and pickled vegetables. Slice for sharing or NOT. Enjoy!
