This Honey Ginger Glazed Salmon bake is a quick thirty minute meal that is both delicious and nutritious !
I saw this glorious Salmon filet at my local grocery store and I had to do it some justice . It was a solid three pounder so we couldn’t finish it for dinner and I made some amazing Salmon patties the next day to use the leftovers ! That bonus recipe is coming next !
I served the filet with marinated red cabbage and some orange slices and avocados along with plain boiled rice .It’s a super easy dish to entertain with also.
This is a tentative recipe and you can adjust ingredients according to the size and amount of your filets .
Here is what you will need:
1 Large Salmon Filet (easily ten substantially sized filets if you’re using sliced ones)
Juice of 3 Large Lemons
3 tablespoons freshly grated ginger
2 tablespoons honey
2 tablespoons Soy Sauce
2 teaspoons salt
3 teaspoons red chili flakes
4 tablespoons Olive Oil
2 tablespoons Thai Green curry paste*
*Note:
If you can’t find Thai green curry paste, you can do without it. Alternatively , If you want you can add some finely chopped cilantro to the marinade .
For Pickled Red Cabbage:
Half a head of Red Cabbage
Honey
2 large lemons
Red chili flakes
Salt
Sliced almonds
Sesame seeds
Optional topping:
Avocados
Oranges
Directions:
Preheat Oven to 350° F . And line a baking tray with parchment paper.
In a lidded jar , add all the ingredients for salmon listed above and give it a good shake.
Lay the salmon on the baking sheet and pour the marinade . Sprinkle with sliced Jalapeños .
Baking for 17 minutes and then turn the broil setting and broil for 3 minutes .
Meanwhile :
Slice the red cabbage thinly and in a mixing bowl add juice of 2 lemons, a tablespoon of honey, 1 teaspoon of red chili flakes and 1 /2 teaspoon of salt and mix well. Let it sit until the salmon cooks.
Once Salmon is done,
Arrange in a platter and top with pickled cabbage, orange slices and sliced avocados.
Sprinkle with sliced almond and sesame seeds heavily and some extra lemon juice !
