Kheer( Rice Pudding)



We grew up with kheer being the go to dessert when all else failed and I know so many of us have the same memories with Kheer ( Rice Pudding). If there was no time to make dessert, left over white rice in whole milk and sugar would just satisfy the sugar cravings.Back home we wouldn’t use evaporated milk often but I feel like this and condensed milk are the best things ever invented in the culinary world . They cut your work in half literally and makes desserts so rich and creamy in no time at all!

I boiled soaked rice and blended them with a hand mixer. And then added warm milk, evaporated milk and sugar and flavored the pudding with cardamom and pistachios but really you can use almonds, coconut shavings, dates, raisins, whatever you have.It is best served chilled

Ingredients:

  • 1/2 cup rice soaked

  • 4 cups whole milk

  • 1 can evaporated milk( optional, you will need 2 extra cups milk)

  • 1 teaspoon cardamom powder

  • 1/2 sugar (you may need more)

  • 1/2 cup Pistachios soaked and then sliced thinly

Directions:

  1. In a small saucepan, boil rice for 8 to 10 mins, then drain and blend with a hand blender or in a blender , just pulse once or two.

  2. Now in a heavy bottomed pot, put milk, cooked rice and evaporated milk. Let this cook over low to medium heat for 45 minutes to an hour until it thickens. Be sure to stir occasionally , the rice can stick to the bottom.

  3. Once thick( it will become a pretty pink hue),add sugar and cardamom powder. Adjust sugar as needed.

  4. Pour in individual glasses or a big bowl. Garnish with nuts.Serve chilled, it makes for pretty individual desserts, you can use teacups (like I have). Good use for teacups that have been sitting around for a while and you just never come around to using them!
