Lemon Curd Parfaits.



I love anything lemon. Lemons and summer go hand in hand. These individual desserts taste like summer in a glass.Your guests will think you have spent hours making it but you and I will just know the secret! You can whip this up in no time and use store bought or homemade lemon curd, whichever is easier for you! The vanilla whipped cream cuts the tart flavor of the curd perfectly! The crunch of the biscuits at the bottom and slices of summer fruit makes this an all rounder. Also a solid excuse to use your fancy glasses . In my opinion, it is just a win win situation!


Ingredients:

  • 12 Digestive Cookies( Or any Neutral Cookie, such as Nilla Wafers)

  • 1 cup Lemon Curd ( Store bought or homemade)

  • 1 cup Heavy Whipping Cream

  • 1/4 cup granulated sugar

  • 1 teaspoon Vanilla Extract

  • Sliced Fruit such as Strawberries, Kiwis, blackberries

Directions:

  1. Crush up the cookies in a bag with a kitchen hammer or your hands.

  2. Whip up the cream with an electric mixer , add sugar and vanilla at soft peak stage and whip until it is at hard peak stage( don't over beat it, it turns into butter really quickly).

  3. To assemble, divide the cookie crumbs in your glasses and line the sliced fruit on the sides of the glasses like I have done.Now pour three tablespoons of lemon curd in each glass. I always like using a piping bag and a tip to pipe the cream in my individual desserts, it is so much easier and gives such a nice look!Make a Swirl and then make another small swirl on top of that.

  4. Garnish the rim with a sliced kiwi or strawberry!Chill in the refrigerator.Enjoy.

Note:This Recipe yields 6 servings or 12 if you use shot glasses .You can also of course make it in a cobbler dish or a pie pan if you are just not up for making individual desserts!




For Homemade Lemon Curd:-

Ingredients:

  • 2 Eggs

  • 1/4 cup lemon juice

  • 1/2 cup sugar

  • 1/4 cup butter

  • A pinch of Salt

Directions:

  1. In a bowl , crack two eggs. Add sugar . Mix with a whisk .

  2. Now transfer the mixture to a saucepan. On low to medium heat whisk the mixture until the sugar dissolves.

  3. While whisking add lemon juice, and salt.Keep on whisking for a few minutes until it starts to thicken, it does require some patience, it will thicken. At this point, add cubes of butter( make sure you keep on whisking). The curd will be ready once it is glossy and the butter has dissolved. Pour in bowl and cover it with plastic wrap , so that a film doesn't form on top. Chill in the refrigerator. Transfer the leftover Curd in a Glass Jar , it can be stored up to two weeks!
