The pumpkin cake with the most perfect coffee frosting will be a dessert you will want to make for all holiday gatherings ! It’s moist and dreamy and addictive and super easy to make.
I start off with a box yellow cake mix , don’t roll your eyes at me ! You want to spend the least amount of time in the kitchen whilst entertaining !
Here is what you will need:
1 Yellow Cake mix
3 large eggs
1 15 oz can of Pumpkin Purée
1 1/2 teaspoon Vanilla extract
1 teaspoon Pumpkin Pie Spice
1/2 cup chopped pecans or walnuts
For the frosting :
4 oz Cream Cheese
4 tablespoons Butter
1 teaspoon Instant Coffee mixed in a tablespoon of boiling water
1 cup Powdered Sugar
Notes:
•You can double the frosting recipe if you like more frosting or are making a layered cake .
•You can make the cake up to three days ahead of time and frosting up to two days .
Directions:
Preheat oven to 350° F .
Grease and line a baking pan with parchment paper . I used a 9 by 5 loaf pan but you can use any size you like , and bake it according to box cake mix directions.
In a large mixing bowl , add cake mix , eggs, vanilla extract , pumpkin purée and chopped pecans and the pumpkin pie spice . Give it a good mix with a handheld mixer or you can also use a stand mixer .Don’t over mix the batter.
Transfer to a baking pan and bake . Mine took 55 minutes to bake . If you’re using a round cake pan, it may take a little less time to bake . If you’re using two pans to make a layered cake , start by timing it for 20 minutes .Insert a toothpick in the middle to check for doneness. If it comes out clean then your cake is done . Let your cakes cool in pan for five minutes then carefully flip on cooling rack .
For frosting:
Add room temperature cream cheese and butter and beat on high speed until light and fluffy .
Add cooled coffee mixture and beat again , now add powdered sugar and beat until mixture is light and fluffy.
Transfer to a piping bag (optional) . You can just use a spatula to spread frosting for a rustic cake .
Pipe on a completely cooled cake and sprinkle with some chopped pecan ! Enjoy !
