You and your crowd will absolutely love this show stopper of a dessert. Inspired by a strawberry and pistachio macaron , this dessert is easy and can be prepared a day in advance.
This recipe yields a large tray, enough to serve 20 people .You can multiply or divide the recipe as per needed.
*I had fresh ground roasted pistachio paste on hand, you can grind 1/2 a cup of pistachio until paste like in a coffee grinder or a bullet.
I have also used store bought pound cake to make it easier.
You will need:
1 and a half store bought pound cakes
2 cups Fresh or frozen strawberries
1 can condensed milk
4 cups of heavy whipping cream
1/2 cup of finely ground pistachios*
Vanilla extract
3/4 confectioners sugar
Fresh Strawberries for garnish
Directions:
Choose your platter/deep dish, and cut the pound cakes into 1 inch thick slices. Layer in the dish.
Blend together strawberries with the can of condensed milk in a blender until well combined.
Pour half of the mixture evenly over the pound cake.
In a stand mixer ( you can use a hand mixer also) add heavy cream, powdered sugar and 1 teaspoon vanilla extract and beat until fluffy or soft peaks are formed.
With the help of a spatula , layer half of the whipped cream. And repeat with another layer of pound cake and strawberry mixture.
For the top layer of the whipped cream , add in the ground pistachios and give it a good mix. Transfer into a piping bag and layer on top of the dessert.
Garnish with freshly sliced strawberries or if you're preparing in advance, garnish with strawberries when about to serve.Enjoy!!
