The Ultimate No Bake Chocolate Cheesecake is so easy to make and is a crowd pleaser for sure !
This is my go to recipe for when I have guests coming over . It can be made in a trifle form or individual servings . Whatever you feel is easier for you.
It also has Greek yogurt in it which makes it healthy ish ? No I am just kidding . I use Greek yogurt in it to balance the sweetness of the cheesecake , you can use sour cream too if you want . The tanginess is perfect in it .
The salted whipped cream is what takes it to the next level. I learnt this trick from a friend who’s a Chef and he makes the best pineapple upside down cake with Salted whipped Cream and since that day I have put Salt in my whipped cream and it is perfection.
I am not a fan of overly sweet desserts , instead I try to balance the sweetness in them . Greek yogurt and Salted Whipped cream do exactly that .
This Recipe yields twelve portions ( in the picture above I have doubled the recipe), you can divide it further in half to make servings .
To make individual portions(pictured below), I highly suggest using a piping bag, it is just easier to pipe the cheesecake and it looks oh so pretty.
Here is what you will need:
1 8 oz brick of Cream Cheese
1/2 cup Greek Yogurt/ Sour Cream
1/4 cup sugar
1/2 cup Whipping Cream
1 teaspoon Vanilla Extract
2 tablespoons Dutch Processed Cocoa Powder
1 cup Dark chocolate Chips
For Salted Whipped Cream:
1 cup Heavy Whipping Cream
1/4 cup sugar
1/2 teaspoon any Coarse Salt ( I used Maldon)
Your favorite Cookies *
* Note: You can use any cookies for the base, I used Oreos but you can use Biscoff lotus cookies digestive biscuits etc.
You can also make this dessert gluten free by using gluten free cookies or omitting them altogether.
Directions:
In a microwave safe bowl melt the Chocolate Chips in 30 second increments , giving them a good mix every time . Do this until completely melted. Allow to cool.
Meanwhile in a large mixing bowl , with a hand mixer beat room temperature cream cheese and yogurt until well mixed . DO NOT use refrigerated cream cheese .
Add sugar , vanilla, cocoa powder and mix some more.
Now add whipping cream and melted chocolate Chips and beat until the consistency of mousse.
For Salted Whipped Cream , add whipping cream in a bowl and beat on high with a hand mixer until soft peaks , add sugar and salt and beat until stiff peaks form. Do not over beat, you will run the risk of turning it into butter , which you can still use but you wont be able to use it for this.
To assemble in a trifle bowl:
Crush Cookies at the bottom of a nice serving bowl , put dollops of Cheese cake and then even it out with the back of a spatula. Add dollops of Salted Whipped Cream and sprinkle with extra crushed cookies .
Do the same with individual desserts but use a piping bag for cheesecake and whipped cream.
