Make these when you are craving chocolate,make these when your hormones are telling you to have a good dose of chocolate. Double the Recipe and make these for a crowd.But most of all, just make these and thank me later for the pounds you gain.
Ingredients:
1/2 cup butter
1 1/2 cups brown sugar ( You could use 1 1/4 cup regular granulated sugar or half and half of both sugars)
2 eggs
1 teaspoon instant coffee
1 teaspoon vanilla extract
3/4 cup good quality cocoa( I use Dutch processed cocoa)
1/2 cup flour
For Ganache:
1/2 cup good quality Dark Chocolate Chips(I used Ghirardelli ones)
1/4 instant coffee granules
1/4 cup heavy cream
A teaspoon of a neutral oil ( I used coconut but vegetable or butter would be fine too)
Coarse Sea Salt for topping
Directions:
Preheat your oven to 350 Degrees Fahrenheit. Line your pan(I used an 8 by 8 inch pan) with parchment or baking paper. And grease it.
In a saucepan melt butter over stove top on low heat until it becomes brown on the sides, careful not to burn it. Now add coffee and vanilla and mix .
Take the mixture off the stove,pour in a mixing bowl(let it cool a few minutes) and add in brown sugar and beat with electric mixer until light and fluffy, add eggs one by one, now add flour and cocoa alternating(don’t over mix), pour in a pan and sprinkle with sea salt .
Bake on 350•F for 25 minutes .
To Make Ganache:
In a microwave safe bowl, put chocolate chip, cream and coffee granules. Microwave on forty second increments, mixing every time until the chocolate melts. Mix until chocolate chips dissolve completely. At this point add your oil and mix well. Pour over cooled brownies and sprinkle with Sea Salt! Let settle a bit and then cut with a sharp knife!
